Yummy Recipes!

I want to share a few recipes from my Pinterest page that my family has tried and approved.

Smashed White Bean & Avocado Sandwich - Delicious!!!  I used fresh added fresh tomatoes from my garden, toasted the bread and left out the cucumbers.


Chicken Flauntas with Jalapeno Jelly



Cream Cheese Chicken Enchiladas -
Made a few with just cream cheese and cheese and they were delicious.



Cilantro Salsa Verde Chicken Enchiladas -
These were very good but next time I will leave out the jalapeno.  I used homemade salsa verde and it already had some heat to it so I suggest testing the salsa verde and adjusting accordingly.


Peanut Butter, Oatmeal, & Chocolate Chip Cookies - All I can say is Yummy!

 These are just a few recipes I have discovered on Pinterest.  I see so many yummy recipes and I don't know if my waist can handle trying them all.

Barnyard Birthday Party

We celebrated E's birthday a month ago at the local Pizza Hut and the birthday party had a barnyard theme.  I called the Target bakery and asked if they could decorate cookies with cows, pigs and sheep and of course they said yes.  When we picked them up we were very pleased.  They could not have matched the barnyard decorations any better.  They were perfect.

Oatmeal Crisp Cookies

These are definitely one of my favorite cookies.  I'm always on the hunt for a good cookie, but this recipe is one that I love.  I sometimes call it my healthy cookie or good for me cookie, but there is no health or good to it.


I alter my recipe a bit, so here we go with my alterations.
Oatmeal Crisp Cookie

1/4 cup butter (I sometime use all butter)  *
1/2 cup crisco  *
1 egg
1 tsp vanilla
1 cup flour  *
1/2 cup quick cooking oats  *
1/4 heaping cup ground flaxseed  *
dash of salt
1 tsp baking powder
1 tsp cinnamon  *
3 cups Oatmeal Crisp cereal
1/2  cup raisens  *

* These are changes to the orginal recipe.

Peanut Butter-Oatmeal Chocolate Chip Coookies

I'm on the hunt for the perfect chocolate chip cookie.  I've tried some pretty good chocolate chip cookies but am always looking for a new recipe.  Here is the newest recipe I tried and it's pretty good.  I found the recipe on browneyedbaker.com.


Peanut Butter-Oatmeal Chocolate Chip Cookies

Makes about 16 cookies

1 cup all-pupose flour
1 tsp baking soda
1/4 tsp salt
1 stick (1/2 cup) unsalted butter, at room temperature
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/3 cup brown sugar
1/2 tsp vanilla
1 egg
1/2 cup rolled oats
1 cup semisweet chocolate chips

1. Preheat oven to 350 degrees F.  Line baking sheets with parchment paper and set aside.
2. Whisk together the flour, baking sode and salt; set aside.
3. On medium speed, cream together the butter, peanut butter, granulated sugar, brown suger and vanilla.  Add the egg and beat until combined.  On low speed, gradually add the flour until just combined.  Stir in oats and chocolate chips.
4.  Use a large cookie scoop (3 tablespoons) and drop dough onto baking sheets about 2 inches apart.  Bake for 10 minutes or until cookies are a light golden brown.  Cool completely on the baking sheet and store in an airtight container.
