Baby Blanket

This is the baby blanket I made for the secretary's new grandaughter .  Earlene's daughter had a precious baby girl Monday and named her Camdyn Layne. 

The blanket was very simple to make.  I used 1 1/2 yards pink gingham and white flannel and just sewed the two pieces together right sides together and left a small opening on one side.  Then I turn the blanket right side out and zig zag stiched around the outside edge.

Peanut Butter-Oatmeal Chocolate Chip Coookies

I'm on the hunt for the perfect chocolate chip cookie.  I've tried some pretty good chocolate chip cookies but am always looking for a new recipe.  Here is the newest recipe I tried and it's pretty good.  I found the recipe on browneyedbaker.com.


Peanut Butter-Oatmeal Chocolate Chip Cookies

Makes about 16 cookies

1 cup all-pupose flour
1 tsp baking soda
1/4 tsp salt
1 stick (1/2 cup) unsalted butter, at room temperature
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/3 cup brown sugar
1/2 tsp vanilla
1 egg
1/2 cup rolled oats
1 cup semisweet chocolate chips

1. Preheat oven to 350 degrees F.  Line baking sheets with parchment paper and set aside.
2. Whisk together the flour, baking sode and salt; set aside.
3. On medium speed, cream together the butter, peanut butter, granulated sugar, brown suger and vanilla.  Add the egg and beat until combined.  On low speed, gradually add the flour until just combined.  Stir in oats and chocolate chips.
4.  Use a large cookie scoop (3 tablespoons) and drop dough onto baking sheets about 2 inches apart.  Bake for 10 minutes or until cookies are a light golden brown.  Cool completely on the baking sheet and store in an airtight container.

Roasted Carrots & Sweet Potatoes

My baby turned one this week and I'm trying to set a good example by eating lots of fruits and vegetables.  I want to expose him to as many different variety of vegetables and fruit as possible.  This week I roasted some carrots and sweet potatoes together.  They were delicious!

1 sweet potato, peeled and cut into cubes
1/2 bag of baby carrots
1 Tbsp olive oil
1/2 Tbsp brown sugar

Mix the four ingredients listed above and spread out on a baking sheet.  Heat over to 400 degrees and bake for 30-40 minutes.
